O give thanks unto the LORD, for he is good: for his mercy endureth for ever.When the holidays roll around there are a couple of things that just have to be on my table or it wouldn't be Thanksgiving to my family. Some of the must haves are Cornbread Dressing, Potatoe Salad, Sweet Potato Pies, Banana Pudding. Green Bean Casserole and Baked Macaroni & Cheese are two other favorites are are also welcome dishes. Squash casserole or brocolli casserole too. But every year when the holidays roll around I know that my family expects their favorites, but I also look for new recipes to try that are simple and quick but that will pack a lot of mmmmmmmm....... boy this is good comments! This year I am adding two dishes to my holiday table that were given to me by my dear friend Shirley of Blueridge, Georgia.
Shirley's Apple Dumplings
2 Granny Smith Apples
2 Cans Pillsbury Original Crescent Rolls
2 Sticks Butter (MELTED)
1 1/2 cups of granulated sugar
1 teaspoon of cinnamon
1 can of Mountain Dew
Preheat your oven to 350 degrees. Melt two sticks of butter. In a seperate container combine your sugar and cinnamon. Add your melted butter to your sugar & cinnamon mixture and mix well. Set aside. Wash & core the two granny smith apples. I use an 8 section apple corer and it gives such nice even sections. Open your crescent rolls. Seperate them into 8 triangles from each can. Beginning at the widest edge of the triangle crescent roll place your apple section and roll and wrap the crescent roll around the apple sections. Place all 16 of them in a
9 x 13 dish. Pour the butter, sugar, cinnamon mixture over the crescent rolls. Pour one can of Mountain Dew over the entire dish. Bake in 350 degree preheated oven for 40 minutes.
You talk about yummy......mmmmmm....mmmmm..... GOOD! Quick & easy, great served hot and just as yummy served cold straight from the fridge! Don't save it for the holidays! It's so good and so simple treat your family often!
Another recipe that my friend Shirley shared with me is a Corn Casserole dish. Now you would think that I would have tried corn casserole before in my life, but I can not recall ever having this dish. So this year I am adding it to my Thanksgiving table.
Shirley's Corn Casserole
1 can whole kernel yellow corn
1 can yellow creamed corn
1 8 oz. box Jiffy corn muffin mix
1 8oz. sour cream
1 stick melted butter
1 cup shredded cheese
Preheat your oven to 350 degrees. Combine all the ingredients except the cheese. Pour into a greased 8 x 8 casserole dish. Bake in a 350 degree oven for 40 - 45 minutes. Top with 1 cup shredded cheese. Place back in the oven for 5 or 10 more minutes until the cheese melts.
I made this dish today and have been so tempted to go dig in a get a serving but I am trying very hard to wait until tomorrow! If my friend says it is good, I know it will be good! I can't wait to try it!

I feel like corn pudding was something that came out in the last few years because we never had it either! My kids love it.
Those apple dumplings were easy, huh? Were they good too?!
